Growing up, I remember my mother hiding money in our pancakes on Pancake Day. She would always wrap up coins in tin foil and place them in our pancakes. My sister and I would love to find our treasures during supper that night. We would always walk away with a full belly and a dollar or two in coins.
Since it’s Shrove Tuesday today so I thought I’d share my favorite pancake recipe that I got from my mother and a few great variations as well.
1 1/2 cups flour
3 tsp baking powder
1/2 tsp salt
3 Tbsp sugar
3 Tbsp melted butter
1/4 tsp vanilla
1 1/4 cup milk (more or less if needed)
Mix dry ingredients. Beat egg, add milk to egg. Make a well in center of dry ingre3dients and add egg and milk mixture. Add melted butter and vanilla. Mix only enought ot make mixture smooth…do not overmix! Fry on hot grill.
Make it a fun treat by adding things like chocolate chips, blueberries, sliced or mashed bananas, or shredded apples.
To make Rainbow Pancakes, make the pancake batter as described in the recipe above. Divide batter into six or seven smaller bowls. Add food coloring to each bowl to get the desired colors. Fry on a hot grill.
Serve in a stack with one of each color to make the “rainbow”.
I’ve done these for sleep overs, but you could do them for Easter, or just for fun!
